Ingredients

The base

  • 2 cups quick oats
  • 1 cup Very Berry Cheerios
  • ¼ cup shredded coconut
  • ¼ cup ground flaxseed
  • 1 tablespoon chia seeds
  • ¼ teaspoon sea salt

The binding mixture

  • ¾ cup creamy almond butter
  • cup honey
  • 2 tablespoons coconut oil (melted)
  • 1 teaspoon vanilla extract

The additional flavor

  • ¼ cup dried blueberries

Instructions

  1. Combine the dry ingredients in a large bowl.
  2. Mix the wet ingredients in a medium bowl until smooth.
  3. Pour the wet mixture over the dry ingredients and stir until combined.
  4. Fold in the dried blueberries.
  5. Roll the mixture into small balls.
  6. Store the energy bites in the refrigerator for up to 2 weeks.
