Ingredients

The salad

  • 2 cups shredded rotisserie chicken
  • 2 cups diced cucumber
  • 2 cups sliced carrots
  • 2 cups diced bell peppers
  • 1 cup edamame beans
  • 6 cups chopped romaine lettuce
  • 4 tablespoons chopped green onion
  • 4 tablespoons raw unsalted cashews

The dressing

  • 1 cup Trader Joe’s Spicy Peanut Dressing

The jars

  • 4 quart size mason jars with lid

Instructions

  1. Prepare the mason jars by lining them up.
  2. In each jar, add 3 tablespoons of dressing.
  3. Layer ½ cup diced cucumber, ½ cup sliced carrots, ½ cup diced bell peppers, and ¼ cup edamame.
  4. Add ½ cup shredded chicken and 1 ½ cups chopped romaine.
  5. Top with 1 tablespoon green onion and 1 tablespoon cashews.
  6. Seal the jars and store them in the refrigerator.
