Ingredients

The Chicken

  • 16 oz boneless skinless chicken breast
  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper
  • ½ cup Frank’s Hot Sauce

The Dressing

  • 8 tablespoons Greek Yogurt Blue Cheese Dressing

The Veggies

  • ½ cup sliced tomatoes
  • ½ cup diced carrots
  • ½ cup diced cucumber
  • ½ cup diced celery

The Salad

  • 4 cups chopped romaine lettuce

Instructions

  1. Cook the chicken breast using your preferred method until fully cooked.
  2. If using the stove top, heat olive oil in a skillet and cook the chicken for 3-4 minutes on each side, then let it cool.
  3. Chop the cooked chicken into ½ inch chunks and toss with Frank’s Hot Sauce.
  4. In four mason jars, place two tablespoons of Greek Yogurt Blue Cheese Dressing at the bottom of each jar.
  5. Layer the chopped veggies, followed by the buffalo chicken, and top with romaine lettuce in each jar.
  6. Cover the jars and refrigerate until ready to eat.
