Marinated Tofu and Vegetable Skewers

Ingredients

The Dry Rub

  • 2 tbsp Simply Organic Original Umami Blend
  • 1 tbsp garlic powder
  • 1 tbsp cumin powder
  • 1 tbsp smoked paprika
  • 1 tsp red chili flakes
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 packet Korean Style BBQ Sauce

The Skewers

  • 12-15 pieces skewers
  • 1 large block extra firm tofu
  • 2 cups button mushrooms, washed
  • 1 piece red pepper, cut into 1-½ inch squares
  • 1 cup cherry tomatoes
  • 1 piece red onion, cut into cubes
  • 2 medium-sized zucchini, cut into ½ inch rounds
  • ½ tsp salt
  • ½ tsp fresh cracked pepper
  • to taste fresh cilantro, for garnish
  • to taste lime, for garnish

Instructions

  1. Press tofu to remove excess liquid and cut into squares.
  2. Mix spices in a bowl and coat the tofu, then add BBQ sauce and marinate in the fridge for up to 1 hour.
  3. Prepare vegetables and soak skewers in water.
  4. Thread marinated tofu and vegetables onto skewers.
  5. Grill skewers on medium-high heat for 5 minutes on each side until golden brown, brushing with remaining sauce.
  6. Serve garnished with fresh cilantro and lime.
