Instructions
- Prepare the tofu by pressing it to remove excess moisture.
- Soak bamboo skewers in water if using them.
- Make the chimichurri marinade by mixing parsley, cilantro, garlic, crushed red pepper, grapeseed oil, red wine vinegar, and salt.
- Build the skewers by threading the vegetables and tofu onto them.
- Brush half of the chimichurri sauce on the skewers and let them marinate for about 30 minutes.
- Preheat the grill and cook the skewers for about 10 minutes on one side.
- Flip the skewers and cook for an additional 10 minutes until browned.
- Brush the skewers with remaining chimichurri sauce and serve.
