Grilled Vegetable Tofu Skewers

Ingredients

Chimichurri Sauce

  • ¼ cup minced fresh parsley
  • ¼ cup minced fresh cilantro
  • 4 cloves garlic, minced
  • ½ teaspoon crushed red pepper
  • ½ cup grapeseed oil
  • ¼ cup red wine vinegar
  • ½ teaspoon salt

Tofu Skewers

  • 1 14-ounce package extra-firm tofu
  • 1 each yellow bell pepper, chopped
  • 1 each poblano pepper, chopped
  • 1 small zucchini, chopped
  • ½ each red onion, chopped
  • 12 each cherry tomatoes

Optional for serving

  • to taste fresh parsley leaves
  • to taste fresh cilantro leaves

Instructions

  1. Prepare the tofu by pressing it to remove excess moisture.
  2. Soak bamboo skewers in water if using them.
  3. Make the chimichurri marinade by mixing parsley, cilantro, garlic, crushed red pepper, grapeseed oil, red wine vinegar, and salt.
  4. Build the skewers by threading the vegetables and tofu onto them.
  5. Brush half of the chimichurri sauce on the skewers and let them marinate for about 30 minutes.
  6. Preheat the grill and cook the skewers for about 10 minutes on one side.
  7. Flip the skewers and cook for an additional 10 minutes until browned.
  8. Brush the skewers with remaining chimichurri sauce and serve.
