Grilled Veg & Tofu Skewers

extra firm tofu (350 grams/12 ounces)

bell pepper, cut into 1-inch pieces

peach, cut into 8 wedges

avocado or other high heat-tolerant oil spray

Instructions
- Prepare the blueberry barbecue sauce by combining all sauce ingredients in a saucepan and cooking until thickened.
- Preheat the grill to high heat.
- Drain and cube the tofu, then thread it along with the vegetables and peach onto skewers.
- Season the skewers with oil, salt, and pepper.
- Grill the skewers until charred, then brush with blueberry barbecue sauce and grill for an additional minute.
- Serve hot with extra barbecue sauce on the side.
