Vegetable & Tofu Skewers with Blueberry Barbecue Sauce

Ingredients

Blueberry BBQ Sauce

  • 1 cup blueberries
  • 1 small onion, grated
  • 1 clove garlic, minced
  • 2 inches ginger, peeled and minced
  • 2 tablespoons pure maple syrup
  • 1 tablespoon tomato paste
  • ½ teaspoon gluten-free tamari soy sauce
  • ¼ cup balsamic vinegar
  • to taste chili flakes (optional)
  • to taste sea salt and ground black pepper

Grilled Veg & Tofu Skewers

  • 1 block extra firm tofu (350 grams/12 ounces)
  • 1 medium bell pepper, cut into 1-inch pieces
  • 1 medium zucchini, cut into 1-inch pieces
  • 1 large peach, cut into 8 wedges
  • 1 small red onion, cut into 1-inch pieces
  • to taste avocado or other high heat-tolerant oil spray
  • to taste sea salt and ground black pepper

Instructions

  1. Prepare the blueberry barbecue sauce by combining all sauce ingredients in a saucepan and cooking until thickened.
  2. Preheat the grill to high heat.
  3. Drain and cube the tofu, then thread it along with the vegetables and peach onto skewers.
  4. Season the skewers with oil, salt, and pepper.
  5. Grill the skewers until charred, then brush with blueberry barbecue sauce and grill for an additional minute.
  6. Serve hot with extra barbecue sauce on the side.
