Barbecued Honey Tofu Skewers

The skewers

extra-firm tofu, cut into cubes

red bell pepper, cut into cubes

yellow bell pepper, cut into cubes

zucchini, sliced
Instructions
- If using bamboo skewers, soak them in cold water for about 15 minutes before cooking.
- In a bowl, combine honey, soy sauce, and garlic. Add tofu, peppers, and zucchini, and stir to coat.
- Cover and marinate in the fridge for 15 minutes, ideally for 8 hours.
- Preheat the barbecue to medium-high heat.
- Drain the tofu, peppers, and zucchini, reserving the marinade.
- Alternately pierce cubes of tofu, peppers, and zucchini onto skewers.
- Place the skewers on the hot and oiled barbecue grill, close the lid, and cook for 10 minutes, turning occasionally and brushing with a little marinade.
- Serve with rice if desired.
