Barbecued Honey Tofu Skewers

Ingredients

The marinade

  • ΒΌ cup honey
  • 3 tbsp soy sauce
  • 4 tsp garlic, chopped

The skewers

  • 1 block extra-firm tofu, cut into cubes
  • 1 medium red bell pepper, cut into cubes
  • 1 medium yellow bell pepper, cut into cubes
  • 1 medium zucchini, sliced

Instructions

  1. If using bamboo skewers, soak them in cold water for about 15 minutes before cooking.
  2. In a bowl, combine honey, soy sauce, and garlic. Add tofu, peppers, and zucchini, and stir to coat.
  3. Cover and marinate in the fridge for 15 minutes, ideally for 8 hours.
  4. Preheat the barbecue to medium-high heat.
  5. Drain the tofu, peppers, and zucchini, reserving the marinade.
  6. Alternately pierce cubes of tofu, peppers, and zucchini onto skewers.
  7. Place the skewers on the hot and oiled barbecue grill, close the lid, and cook for 10 minutes, turning occasionally and brushing with a little marinade.
  8. Serve with rice if desired.
