Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- In a large bowl, combine the chickpea ingredients and stir until well coated.
- Transfer the chickpeas to the lined baking sheet and bake for 25 minutes, stirring occasionally.
- Prepare the RightRice according to package instructions.
- In a deep bowl, mix all whipped yogurt ingredients until well combined.
- Once the chickpeas are cooked, portion the RightRice into bowls, add the whipped yogurt and chickpeas, and top with any additional toppings.
