Crispy Chickpeas with Whipped Yogurt and Rice

Ingredients

The chickpeas

  • 1 can (550 ml) chickpeas
  • 2 tbsp olive oil
  • 1 juiced lemon
  • 1 tbsp garlic powder
  • 1 tbsp Umami powder
  • 1 tsp paprika
  • 1 tsp oregano
  • ½ tsp salt
  • ½ tsp pepper
  • a dash red chili flakes

The whipped yogurt

  • 1 cup yogurt
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • ½ tsp sea salt
  • ¼ tsp cracked pepper
  • ¼ cup chopped mint

The rice

  • 1 package Cilantro Lime RightRice

Toppings

  • to taste extra lemon or lime
  • to taste fresh mint
  • to taste hot sauce (optional)

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine the chickpea ingredients and stir until well coated.
  3. Transfer the chickpeas to the lined baking sheet and bake for 25 minutes, stirring occasionally.
  4. Prepare the RightRice according to package instructions.
  5. In a deep bowl, mix all whipped yogurt ingredients until well combined.
  6. Once the chickpeas are cooked, portion the RightRice into bowls, add the whipped yogurt and chickpeas, and top with any additional toppings.
