Ingredients

The chickpeas

  • 1 can chickpeas (15 ounces), rinsed and drained, or 1 ½ cups cooked chickpeas

The seasoning

  • 1 tablespoon olive oil
  • teaspoon fine salt
  • optional seasonings (e.g., curry powder, chili powder, pumpkin spice blend)

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Pat the chickpeas dry and discard any loose skins.
  3. Spread the chickpeas evenly on the baking sheet and roast for 20 to 25 minutes, shaking the pan every 10 minutes.
  4. After roasting, turn off the oven and let the chickpeas rest inside for 10 to 15 minutes.
  5. Transfer the chickpeas to a bowl and toss with olive oil, salt, and any optional seasonings.
  6. Allow to cool completely before storing in a sealed bag.
