Ingredients

Savory Creole Chickpeas

  • 2 15-ounce can chickpeas (drained and dried thoroughly)
  • 1-2 tablespoons canola oil
  • ½ teaspoon sea salt
  • 2 teaspoons Creole seasoning

Sweet Cinnamon Chickpeas

  • 2 15-ounce cans chickpeas (drained, rinsed, and dried)
  • 2 tablespoons canola oil
  • ¼ cup granulated sugar
  • 1 tablespoon cinnamon
  • ½ teaspoon nutmeg (optional)

Instructions

  1. Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper or foil.
  2. Drain, rinse, and dry the canned chickpeas thoroughly, removing any excess skin.
  3. Spread the chickpeas on the baking sheet and let them air dry for about 10-15 minutes.
  4. Roast the chickpeas for 30-40 minutes, shaking the pan 1-2 times during roasting.
  5. Remove from the oven, toss with oil and spices, then return to the oven and bake until crunchy, about 10 more minutes.
  6. Let the chickpeas cool for at least 1 hour to become crunchier.
  7. Store in an airtight container in a dry place for up to 1 week.
