Actually Crispy Baked Chickpeas

The chickpeas

chickpeas (drained and very well drained + thoroughly dried)
The seasoning

avocado or other neutral oil (optional)

sea salt

seasonings of choice (such as DIY Curry Powder, Shawarma Spice Blend, or chili powder)
Instructions
- Preheat the oven to 350°F (176°C) and prepare a baking sheet.
- Drain the chickpeas well. If using oil, rinse and drain them thoroughly; if omitting oil, just drain well.
- Spread the chickpeas on a towel and dry them by rolling gently; optionally peel off the skins for extra crispiness.
- Transfer the chickpeas to a bowl, add oil (if using) and salt, and mix well without adding other seasonings yet.
- Bake for 40-50 minutes until golden brown and crispy, shaking the pan halfway through.
- Remove from the oven and toss with seasonings while warm, then let cool for 5-10 minutes.
- Store in a container with a cracked lid to maintain crispiness.
