Easy Romesco Sauce

Ingredients

  • 1 jar roasted red peppers (16-ounce, drained)
  • ½ cup raw or roasted almonds (unsalted)
  • ¼ cup oil-packed sun-dried tomatoes (rinsed and drained)
  • 2 cloves garlic (medium-to-large, peeled and quartered)
  • 1 tablespoon sherry vinegar or red wine vinegar
  • 1 teaspoon smoked paprika
  • ½ teaspoon fine sea salt (to taste)
  • ¼ teaspoon cayenne pepper
  • ½ cup extra-virgin olive oil

Instructions

  1. Combine all ingredients except the olive oil in a blender or food processor.
  2. Blend starting on low speed and gradually increase until mostly blended.
  3. Drizzle in the olive oil while blending until desired consistency is reached.
  4. Taste and adjust salt if necessary.
  5. Serve immediately or store in a jar in the refrigerator for 7 to 10 days.
