Easy Romesco Sauce

roasted red peppers (16-ounce, drained)

raw or roasted almonds (unsalted)

oil-packed sun-dried tomatoes (rinsed and drained)

garlic (medium-to-large, peeled and quartered)

sherry vinegar or red wine vinegar

smoked paprika

fine sea salt (to taste)

cayenne pepper

extra-virgin olive oil
Instructions
- Combine all ingredients except the olive oil in a blender or food processor.
- Blend starting on low speed and gradually increase until mostly blended.
- Drizzle in the olive oil while blending until desired consistency is reached.
- Taste and adjust salt if necessary.
- Serve immediately or store in a jar in the refrigerator for 7 to 10 days.
