Easiest Homemade Romesco Sauce

Ingredients

  • 1 cup raw almonds
  • 3 large bell peppers
  • 8 ounces cherry tomatoes or 2 large tomatoes
  • 6 cloves garlic
  • ¼ cup extra-virgin olive oil
  • 1/3 cup extra-virgin olive oil for blending
  • 2 teaspoons smoked paprika
  • 3 to 4 tablespoons white balsamic vinegar
  • to taste none kosher salt or fine sea salt

Instructions

  1. Preheat the oven to 500ºF.
  2. Toast the almonds in a skillet over low heat.
  3. On a sheet pan, toss the peppers, tomatoes, garlic, olive oil, and salt.
  4. Roast for 15 to 20 minutes until browned.
  5. Peel the garlic cloves and add all roasted ingredients to a blender.
  6. Add smoked paprika, toasted almonds, additional salt, olive oil, and vinegar.
  7. Purée until mostly smooth with a slightly chunky texture.
  8. Taste and adjust seasoning if needed.
