Easiest Homemade Romesco Sauce

Instructions
- Preheat the oven to 500ºF.
- Toast the almonds in a skillet over low heat.
- On a sheet pan, toss the peppers, tomatoes, garlic, olive oil, and salt.
- Roast for 15 to 20 minutes until browned.
- Peel the garlic cloves and add all roasted ingredients to a blender.
- Add smoked paprika, toasted almonds, additional salt, olive oil, and vinegar.
- Purée until mostly smooth with a slightly chunky texture.
- Taste and adjust seasoning if needed.
