Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 cup unsalted butter
  • 2 teaspoons water
  • cups brown sugar
  • ½ cup white sugar
  • 2 large whole eggs
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 3 ounces bittersweet chocolate, chopped
  • 6 ounces semi-sweet chocolate chips
  • cup finely chopped walnuts

Instructions

  1. Whisk together flour, baking soda, and salt.
  2. Melt the butter in a saucepan over medium-low heat until it turns dark brown, then pour it into a bowl and whisk in water.
  3. Allow the brown butter to cool for about 10 minutes, then whisk in the sugars.
  4. Add the eggs and vanilla, whisking until smooth.
  5. Combine the wet and dry ingredients until just mixed.
  6. Fold in the chopped chocolate and walnuts without over-mixing.
  7. Chill the dough for 1 hour.
  8. Preheat the oven to 350°F and scoop out 2-ounce balls of dough onto a baking sheet, spacing them apart.
  9. Bake for 8 minutes, then optionally shape them with a cookie cutter.
  10. Continue baking for an additional 3 to 4 minutes until the edges are lightly golden brown.
  11. Let cool on the baking sheet for 5 minutes before transferring to a cooling rack.
