Ingredients

  • 1 cup King Arthur Gluten Free Measure for Measure flour
  • 1 tsp aluminum-free double-acting baking powder
  • ΒΌ tsp fine sea salt
  • 1 large ripe banana
  • 1 large egg
  • 1 cup full fat coconut milk

Instructions

  1. Preheat the griddle, cast iron pan, or skillet to medium heat.
  2. Combine the dry ingredients in a mixing bowl and whisk together.
  3. Mash the banana in the bowl until crumbly.
  4. Add the egg and coconut milk to the bowl and stir to combine.
  5. Grease the pan with avocado or coconut oil.
  6. Pour the batter onto the hot griddle and cook for about 2-3 minutes per side, flipping when bubbles form on the surface.
  7. Serve immediately or keep warm in the oven. These pancakes can also be frozen and reheated in a toaster.
