Instructions
- Preheat the griddle, cast iron pan, or skillet to medium heat.
- Combine the dry ingredients in a mixing bowl and whisk together.
- Mash the banana in the bowl until crumbly.
- Add the egg and coconut milk to the bowl and stir to combine.
- Grease the pan with avocado or coconut oil.
- Pour the batter onto the hot griddle and cook for about 2-3 minutes per side, flipping when bubbles form on the surface.
- Serve immediately or keep warm in the oven. These pancakes can also be frozen and reheated in a toaster.
