Ingredients

The meat

  • 4 cloves garlic, crushed
  • 4 pieces center cut bone-in pork chops, trimmed of excess fat

The spices

  • tsp sazon
  • 1 tsp ground cumin
  • to taste kosher salt and black pepper
  • 2 tbsp all purpose unbleached flour

The vegetables

  • 8 oz yukon gold potato, peeled and diced
  • 1 piece red bell pepper, diced
  • 1 8 oz can tomato sauce
  • ¼ cup alcapparado or green pimento olives
  • ¼ cup plus 1 tbsp fresh chopped cilantro
  • 2 pieces dried bay leaves

Instructions

  1. Rub the pork chops with crushed garlic, then season with sazon, cumin, salt, and pepper.
  2. Sprinkle flour over the chops and place them in the slow cooker.
  3. Add the diced potatoes and peppers on top of the pork.
  4. Pour the tomato sauce and water over the mixture.
  5. Add the garlic, olives, cilantro, and bay leaves.
  6. Cook on LOW for 8 hours until the potatoes are tender.
  7. Transfer the pork chops to a platter, remove bay leaves, and stir in remaining cilantro.
  8. Serve one chop per plate with sauce and vegetables.
