Slow Cooker Pork Chops

Instructions
- Season the pork chops with salt, pepper, and creole seasoning.
- Heat 2 tablespoons of oil in a pan and brown the pork for about 3 minutes on each side, then transfer to the slow cooker.
- In the same pan, heat the remaining oil and sauté onion, garlic, and thyme until the onion is transparent.
- Add mushrooms, Dijon mustard, and Italian seasoning, and sauté for another 3 minutes.
- Pour in water and heavy cream, bring to a boil, then simmer for 3-4 minutes. Season with salt and pepper.
- Transfer the sauce to the slow cooker with the pork and cook on low for 7-8 hours or on high for 3-4 hours until the pork is tender.
- Before the pork is done, mix flour with ¼ cup of water until smooth, then add to the slow cooker and stir gently to thicken the gravy.
- Serve the pork chops with the gravy over rice, mashed potatoes, or noodles.
