Slow Cooker Pork Chops

Ingredients

The pork chops

  • 4 pieces boneless pork chops
  • to taste salt
  • to taste pepper
  • ½ teaspoon creole seasoning
  • ¼ cup olive oil

The sauce

  • 1 small onion, sliced
  • 2 teaspoons minced garlic
  • 1 teaspoon fresh thyme
  • 2 cups mushrooms, sliced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Italian seasoning
  • 1 cup water
  • 1 cup heavy cream
  • 2 tablespoons flour

Instructions

  1. Season the pork chops with salt, pepper, and creole seasoning.
  2. Heat 2 tablespoons of oil in a pan and brown the pork for about 3 minutes on each side, then transfer to the slow cooker.
  3. In the same pan, heat the remaining oil and sauté onion, garlic, and thyme until the onion is transparent.
  4. Add mushrooms, Dijon mustard, and Italian seasoning, and sauté for another 3 minutes.
  5. Pour in water and heavy cream, bring to a boil, then simmer for 3-4 minutes. Season with salt and pepper.
  6. Transfer the sauce to the slow cooker with the pork and cook on low for 7-8 hours or on high for 3-4 hours until the pork is tender.
  7. Before the pork is done, mix flour with ¼ cup of water until smooth, then add to the slow cooker and stir gently to thicken the gravy.
  8. Serve the pork chops with the gravy over rice, mashed potatoes, or noodles.
