Ingredients

The pork chops

  • 2¼-2½ lbs bone-in pork chops
  • 1 tsp salt
  • ¼ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ¾ cup all-purpose flour
  • 4 tbs unsalted butter
  • 2 tbs olive oil

The gravy

  • cup sweet onion
  • 1 tbs garlic
  • 2 tsp fresh thyme
  • 3 cups chicken broth
  • ½ cup heavy cream

Instructions

  1. Pat dry the pork chops and season both sides with salt, black pepper, paprika, and garlic powder.
  2. Dredge the seasoned pork chops in flour and set aside.
  3. Heat butter and olive oil in a skillet over medium heat, then add the floured pork chops.
  4. Cook the pork chops for 4-5 minutes on each side until golden brown, then remove and cover with foil.
  5. In the same skillet, cook sliced onions for 8-10 minutes until caramelized, stirring frequently.
  6. Add minced garlic and cook for 1 minute.
  7. Stir in reserved flour and cook for 2 minutes to form a roux.
  8. Add chicken broth, scraping up brown bits, and let it thicken for 2-3 minutes.
  9. Stir in heavy cream and thyme, then season to taste.
  10. Return pork chops to the skillet, spoon gravy over them, and simmer for 12-14 minutes.
  11. Let the pork chops rest in the gravy for 5 minutes before serving.
