Smothered Pork Chops

The gravy

Instructions
- Pat dry the pork chops and season both sides with salt, black pepper, paprika, and garlic powder.
- Dredge the seasoned pork chops in flour and set aside.
- Heat butter and olive oil in a skillet over medium heat, then add the floured pork chops.
- Cook the pork chops for 4-5 minutes on each side until golden brown, then remove and cover with foil.
- In the same skillet, cook sliced onions for 8-10 minutes until caramelized, stirring frequently.
- Add minced garlic and cook for 1 minute.
- Stir in reserved flour and cook for 2 minutes to form a roux.
- Add chicken broth, scraping up brown bits, and let it thicken for 2-3 minutes.
- Stir in heavy cream and thyme, then season to taste.
- Return pork chops to the skillet, spoon gravy over them, and simmer for 12-14 minutes.
- Let the pork chops rest in the gravy for 5 minutes before serving.
