Ingredients

The pork chops

  • 4 pieces pork chops
  • 1 tablespoon olive oil
  • salt to taste salt
  • pepper to taste pepper

The gravy

  • ¼ cup butter
  • 8 ounces sliced mushrooms
  • 1 medium yellow onion
  • 1 teaspoon garlic
  • ¼ cup flour
  • cups beef broth
  • ¼ cup heavy cream
  • 1 tablespoon chopped parsley

Instructions

  1. Heat olive oil in a large pan over medium-high heat and season pork chops with salt and pepper.
  2. Cook pork chops for 6-8 minutes per side until a meat thermometer reads 145°F, then remove and keep warm.
  3. Melt butter in the same pan, add mushrooms and onions, and season with salt and pepper.
  4. Cook mushrooms and onions for 7-9 minutes until tender and browned, then add garlic and cook for 30 seconds.
  5. Stir in flour and cook for 1 minute, then slowly add beef broth while whisking until smooth.
  6. Bring the sauce to a simmer and cook for 2-3 minutes until thickened, then stir in heavy cream and season with salt and pepper.
  7. Return pork chops to the pan and spoon sauce over them, then sprinkle with parsley before serving.
