Instructions
- Heat olive oil in a large pan over medium-high heat and season pork chops with salt and pepper.
- Cook pork chops for 6-8 minutes per side until a meat thermometer reads 145°F, then remove and keep warm.
- Melt butter in the same pan, add mushrooms and onions, and season with salt and pepper.
- Cook mushrooms and onions for 7-9 minutes until tender and browned, then add garlic and cook for 30 seconds.
- Stir in flour and cook for 1 minute, then slowly add beef broth while whisking until smooth.
- Bring the sauce to a simmer and cook for 2-3 minutes until thickened, then stir in heavy cream and season with salt and pepper.
- Return pork chops to the pan and spoon sauce over them, then sprinkle with parsley before serving.
