Ingredients

The pork chops

  • 4 pieces bone-in or boneless pork chops

The spices

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon fine salt
  • ½ teaspoon black pepper
  • 1 teaspoon ground sage

The cooking ingredients

  • 2 tablespoons avocado oil or olive oil
  • 1 sweet yellow onion thinly sliced
  • 2 cups chicken broth
  • 3 tablespoons all-purpose flour

Instructions

  1. Mix the garlic powder, onion powder, salt, and pepper in a small bowl.
  2. Season both sides of the pork chops with the spice mixture.
  3. Heat oil in a skillet over medium-high heat and sear the pork chops until browned on both sides.
  4. Remove the pork chops and keep them warm.
  5. Add more oil to the skillet, deglaze with some broth, and sauté the sliced onion until browned.
  6. Sprinkle flour over the onions and stir until coated.
  7. Add the remaining broth and ground sage, and bring to a simmer until thickened.
  8. Return the pork chops to the skillet, cover with gravy, and cook until the internal temperature reaches 145°F.
  9. Garnish with fresh herbs and serve, optionally with mashed potatoes.
