Smothered Pork Chops

Ingredients

The pork chops

  • 4 8-oz Boneless pork chops

The seasonings

  • 1 tsp Sea salt
  • ½ tsp Garlic powder
  • ½ tsp Onion powder
  • ¼ tsp Black pepper

The cooking ingredients

  • 2 tbsp Olive oil
  • 1 large Onion (sliced into thin half moons)
  • 2 cloves Garlic (minced)
  • 1 tbsp Fresh thyme (or 1 tsp dried thyme)
  • 1 cup Chicken broth (reduced sodium)
  • 1.5 oz Cream cheese (cut into small chunks)

Instructions

  1. Pat the pork chops dry and season both sides with salt, garlic powder, onion powder, and pepper.
  2. Heat olive oil in a Dutch oven over medium-high heat and sear the pork chops until browned, then set aside.
  3. Reduce heat and caramelize the sliced onions in the same pot for 15-20 minutes.
  4. Preheat the oven to 375°F (190°C).
  5. Add minced garlic and thyme to the onions and sauté until fragrant.
  6. Pour in the chicken broth, scraping the bottom of the pot, and simmer until the sauce thickens.
  7. Stir in the cream cheese until melted into the sauce.
  8. Return the pork chops to the pot, covering them with sauce, and bake for 20-25 minutes until cooked through.
