Ingredients

The Pork Chops

  • 4 pieces pork chops
  • to taste salt and pepper
  • 2 teaspoons Cajun seasoning

The Coating

  • ¾ cup all-purpose flour
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon white pepper
  • 1 teaspoon granulated onion
  • 2 teaspoons garlic powder

The Cooking

  • 3 tablespoons vegetable oil
  • 1 large onion
  • 3-4 cloves garlic
  • 1-2 teaspoons fresh thyme
  • 3 tablespoons unsalted butter
  • ¾-1 cup milk
  • 3 cups chicken broth

Instructions

  1. Pat dry the pork chops and season with salt and Cajun seasoning.
  2. Mix flour, paprika, cayenne pepper, white pepper, granulated onion, and garlic powder on a plate.
  3. Dredge the pork chops in the flour mixture until coated, shaking off excess flour.
  4. Heat oil in a skillet over medium-high heat and fry the pork chops until golden brown, about 4 to 5 minutes per side.
  5. Remove the chops and set aside. Sauté onions in the skillet for 2-3 minutes, then add garlic and thyme, cooking for an additional 3-5 minutes until onions are wilted.
  6. Remove the onions and add butter to the skillet, letting it melt.
  7. Stir in the leftover seasoned flour to form a paste, then gradually whisk in milk and chicken broth until thickened, about 5 minutes.
  8. Return the onions to the skillet, mix well, and season with salt and pepper.
  9. Add the pork chops back to the skillet along with their juices, bring to a boil, then reduce to a simmer.
  10. Cook for 30-45 minutes, stirring occasionally, until the pork is tender.
