Instructions
- Preheat the oven to 350°F and prepare a loaf pan with cooking spray.
- In a large bowl, mix the dry ingredients: flour, sugar, salt, baking powder, cinnamon, and nutmeg.
- In another bowl, combine the wet ingredients: eggnog, oil, eggs, vanilla extract, and rum extract.
- Gradually add the wet mixture to the dry ingredients and stir until just combined.
- Pour the batter into the prepared loaf pan and tap it on the counter to settle.
- Bake for 65-70 minutes, or until a toothpick comes out clean.
- Let the bread cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
- While cooling, prepare the glaze by whisking together the powdered sugar, eggnog, vanilla extract, rum extract, and nutmeg.
- Drizzle the glaze over the cooled bread, slice, and serve.
