Ingredients

The bread

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¾ cup eggnog
  • ½ cup vegetable or canola oil
  • 2 large eggs, slightly beaten
  • 1 teaspoon vanilla extract
  • ½ teaspoon rum extract

The eggnog glaze

  • 1 cup powdered sugar
  • 3 tablespoons eggnog
  • ½ teaspoon vanilla extract
  • ¼ teaspoon rum extract
  • teaspoon ground nutmeg

Instructions

  1. Preheat the oven to 350°F and prepare a loaf pan with cooking spray.
  2. In a large bowl, mix the dry ingredients: flour, sugar, salt, baking powder, cinnamon, and nutmeg.
  3. In another bowl, combine the wet ingredients: eggnog, oil, eggs, vanilla extract, and rum extract.
  4. Gradually add the wet mixture to the dry ingredients and stir until just combined.
  5. Pour the batter into the prepared loaf pan and tap it on the counter to settle.
  6. Bake for 65-70 minutes, or until a toothpick comes out clean.
  7. Let the bread cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
  8. While cooling, prepare the glaze by whisking together the powdered sugar, eggnog, vanilla extract, rum extract, and nutmeg.
  9. Drizzle the glaze over the cooled bread, slice, and serve.
