Spiced Eggnog Muffins

Ingredients

The muffins

  • 2 ¼ cups all-purpose flour
  • ½ cup Splenda sugar blend (or 1 cup sugar)
  • 2 tsp baking powder
  • ½ tsp ground nutmeg
  • 2 large eggs, lightly beaten
  • 1 cup eggnog with rum
  • ½ cup light butter, melted and cooled
  • 1 tsp vanilla

Nutmeg-Streusel Topping

  • cup all-purpose flour
  • 8 tsp Splenda sugar blend (or ⅓ cup sugar)
  • ¼ tsp ground nutmeg
  • 2 Tbsp light butter

Instructions

  1. Preheat the oven to 375°F.
  2. Grease two muffin tins or line with paper bake cups.
  3. In a medium bowl, mix flour, sugar, baking powder, and nutmeg; make a well in the center.
  4. In another bowl, combine eggs, eggnog, melted butter, and vanilla; add this mixture to the flour mixture all at once.
  5. Stir until just moistened; the batter should be lumpy.
  6. Spoon the batter into prepared muffin cups, filling each a little over two-thirds full.
  7. Sprinkle the streusel topping over the batter in the cups.
  8. Bake for 18 to 20 minutes until golden and a toothpick inserted comes out clean.
  9. Cool in the muffin cups for 5 minutes, then remove and serve warm.
