Ingredients

The streusel

  • ½ cup all-purpose flour
  • ½ cup brown sugar
  • ¾ teaspoon ground cinnamon
  • teaspoon ground nutmeg
  • 5 tablespoons unsalted butter (cut into small pieces)

The muffins

  • 2 cups all-purpose Gold Medal flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 cup eggnog
  • 1 large egg
  • 5 tablespoons unsalted butter (melted and cooled)
  • 1 teaspoon vanilla extract

The eggnog glaze

  • 1 cup powdered sugar
  • 3 tablespoons eggnog
  • a pinch nutmeg

Instructions

  1. Preheat the oven to 350°F and prepare a muffin pan with liners or cooking spray.
  2. Make the streusel by mixing flour, brown sugar, cinnamon, and nutmeg in a bowl, then rub in the butter until crumbly.
  3. In a separate bowl, whisk together the dry ingredients for the muffins.
  4. In another bowl, combine the wet ingredients and mix until smooth.
  5. Combine the wet and dry ingredients, mixing until just combined.
  6. Fill each muffin cup with batter, add streusel, then top with more batter and remaining streusel.
  7. Bake for 20 minutes or until a toothpick comes out clean.
  8. Prepare the eggnog glaze by whisking together powdered sugar, eggnog, and nutmeg.
  9. Drizzle the glaze over the cooled muffins and serve.
