Instructions
- Preheat the oven to 350°F and prepare a muffin pan with liners or cooking spray.
- Make the streusel by mixing flour, brown sugar, cinnamon, and nutmeg in a bowl, then rub in the butter until crumbly.
- In a separate bowl, whisk together the dry ingredients for the muffins.
- In another bowl, combine the wet ingredients and mix until smooth.
- Combine the wet and dry ingredients, mixing until just combined.
- Fill each muffin cup with batter, add streusel, then top with more batter and remaining streusel.
- Bake for 20 minutes or until a toothpick comes out clean.
- Prepare the eggnog glaze by whisking together powdered sugar, eggnog, and nutmeg.
- Drizzle the glaze over the cooled muffins and serve.
