Ingredients

The muffins

  • ¼ cup butter at room temperature
  • ¼ cup canola oil
  • ½ cup granulated sugar
  • cup light brown sugar
  • 2 large eggs
  • 2⅔ cups all-purpose flour
  • teaspoons baking powder
  • ¼ teaspoon baking soda
  • teaspoons ground nutmeg
  • ¾ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup eggnog

The glaze

  • 2 tablespoons butter melted
  • cups confectioners’ sugar sifted
  • ½ cup eggnog
  • ¾ teaspoon vanilla
  • teaspoon cinnamon
  • teaspoon ground nutmeg

Instructions

  1. Preheat the oven to 350°F and grease the muffin pans.
  2. Cream together the butter, canola oil, and sugars until smooth, then add the eggs.
  3. Whisk together the dry ingredients in a separate bowl.
  4. Combine the dry ingredients with the butter mixture alternately with the eggnog.
  5. Fill the muffin cups with the batter and bake for 10-12 minutes until golden brown.
  6. Make the glaze by whisking together the glaze ingredients until smooth, then dip the muffin tops into the glaze.
