Ingredients

The muffins

  • 1 ¾ cups all-purpose flour
  • ½ cup granulated sugar
  • ¼ cup packed light brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup milk or buttermilk
  • cup vegetable/canola oil or melted butter

The topping

  • ½ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 6 tablespoons melted butter

Instructions

  1. Preheat the oven to 350°F and grease a 12-cup muffin tin.
  2. In a bowl, whisk together the dry ingredients: flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together the wet ingredients: egg, vanilla, milk (or buttermilk), and oil (or melted butter).
  4. Combine the wet ingredients with the dry ingredients, mixing until just combined.
  5. Scoop the batter into the muffin tin, filling each cup about 2/3 full.
  6. Bake for 15-18 minutes until the tops spring back when touched.
  7. Let the muffins cool slightly before transferring them to a cooling rack.
  8. For the topping, mix sugar and cinnamon in a bowl, dip the tops of the muffins in melted butter, and roll them in the cinnamon-sugar mixture.
