Ingredients

The muffins

  • cup unsalted butter, softened to room temperature
  • ½ cup granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • cups all-purpose flour
  • teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ cup milk, at room temperature

The coating

  • 3 tablespoons unsalted butter
  • 1 cup confectioners’ sugar

Instructions

  1. Preheat the oven to 350°F (177°C) and grease a mini muffin pan.
  2. Beat the butter and sugar together until creamy, then add the egg and vanilla, mixing well.
  3. Combine the flour, baking powder, cinnamon, and salt, then gradually add the milk to form a thick batter.
  4. Spoon the batter into the mini muffin wells, filling them about ⅔ full.
  5. Bake for 12-14 minutes until a toothpick comes out clean, then cool in the pan for 5 minutes.
  6. Melt the butter for coating, then dunk each muffin in melted butter and coat with confectioners’ sugar.
