Crispy Peanut Butter Cookies

salted peanuts, roughly chopped
Instructions
- Preheat the oven to 180C/350F and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the peanut butter, egg, and sugar, then mix well.
- Gently fold in half of the chopped peanuts.
- Form 12 balls of dough and roll each ball in the remaining chopped peanuts before transferring to the baking sheet.
- Bake for 12-15 minutes until the edges are golden brown.
- Allow the cookies to cool completely on the baking sheet.
