Ingredients

The cookie dough

  • 2 large eggs
  • ½ cup brown sugar
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • 1 cup natural peanut butter
  • 1 cup old fashioned oats

The mix-ins

  • cup semi-sweet chocolate chips
  • cup peanut butter chips
  • ¼ cup coconut chips, crushed
  • ¼ cup colored chocolate candies
  • to taste sea salt for sprinkling

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a mixer, combine the eggs and brown sugar.
  3. Add peanut butter, vanilla, salt, and baking soda; mix well.
  4. Incorporate the oats until combined.
  5. Add chocolate chips, peanut butter chips, candies, and coconut chips; mix until just combined.
  6. Line a cookie sheet with parchment paper and scoop the dough onto the sheet.
  7. Pat each cookie down into shape, wetting hands if necessary, and sprinkle with sea salt.
  8. Bake for 10 minutes and allow to cool on the cookie sheet for at least 10 minutes.
