Ingredients

The salmon

  • 2 pounds side of salmon
  • ½ teaspoon kosher salt

The sauce

  • 3 tablespoons classic hot sauce (e.g., Frank’s RedHot)
  • 2 tablespoons unsalted butter
  • 1 tablespoon honey
  • ½ teaspoon garlic powder
  • pinch cayenne pepper (optional)

The toppings

  • cup crumbled blue cheese or feta cheese (optional)
  • to taste chopped fresh chives, cilantro, or parsley (optional)

Instructions

  1. Let the salmon sit at room temperature for 10 minutes.
  2. Preheat the oven to 375°F and line a baking sheet with aluminum foil.
  3. Lightly coat the foil with baking spray and place the salmon on top, seasoning with kosher salt.
  4. In a microwave-safe bowl, combine hot sauce, butter, honey, garlic powder, and cayenne; microwave until melted and stir to combine.
  5. Brush about two-thirds of the sauce over the salmon and wrap the foil around it to create a packet.
  6. Bake for 15-20 minutes until almost cooked through.
  7. Uncover the salmon, brush with remaining sauce, and broil for 3 minutes until golden.
  8. Remove from oven, check for doneness, and let it rest if necessary.
  9. Sprinkle with cheese and herbs, then cut into portions and serve.
