Simple Salmon and Broccoli with Roasted Lemon

Instructions
- Rinse the quinoa well and cook according to package instructions.
- Heat a light coating of olive oil in a cast iron pan.
- Season both sides of the salmon with salt and pepper.
- Once the pan is hot, place the salmon in it and cook a lemon cut side down alongside the salmon.
- Watch the salmon closely, it is done when there are no raw parts visible.
- Remove the salmon and lemon from the skillet.
- Add more olive oil and fresh broccoli to the skillet, seasoning with salt and pepper, and stir fry for a few minutes.
- Plate a bed of quinoa, then add the salmon and broccoli on top.
- Squeeze the charred lemon over everything and serve.
