Simple Salmon and Broccoli with Roasted Lemon

Ingredients

  • 12 oz Skinless Salmon Filet
  • 1 unit lemon
  • 3 cups Broccoli Florets, fresh
  • 1 cup Red Quinoa, cooked
  • to taste unit salt
  • to taste unit pepper

Instructions

  1. Rinse the quinoa well and cook according to package instructions.
  2. Heat a light coating of olive oil in a cast iron pan.
  3. Season both sides of the salmon with salt and pepper.
  4. Once the pan is hot, place the salmon in it and cook a lemon cut side down alongside the salmon.
  5. Watch the salmon closely, it is done when there are no raw parts visible.
  6. Remove the salmon and lemon from the skillet.
  7. Add more olive oil and fresh broccoli to the skillet, seasoning with salt and pepper, and stir fry for a few minutes.
  8. Plate a bed of quinoa, then add the salmon and broccoli on top.
  9. Squeeze the charred lemon over everything and serve.
