Frizzled-Onion Cabbage Salad

Instructions
- Heat vegetable oil in a skillet and fry one sliced onion until golden brown, then drain on paper towels and season with salt.
- Repeat the frying process for the second onion and reserve some oil.
- Blend peanut butter, lime juice, fish sauce, sugar, garlic, serrano chile, salt, reserved onion oil, and water until smooth.
- Toss sliced Napa cabbage, cilantro, mint, and half of the frizzled onions in a bowl, then drizzle with the dressing and mix.
- Serve the salad on a plate and top with remaining cilantro, mint, and frizzled onions.
