Frizzled-Onion Cabbage Salad

Ingredients

The salad

  • ¼ head Napa cabbage
  • ½ cup cilantro leaves with tender stems
  • ½ cup mint leaves
  • 1 clove garlic
  • ½–1 chile serrano

The dressing

  • ¼ cup smooth peanut butter
  • 3 Tbsp. fresh lime juice
  • 2 Tbsp. fish sauce
  • 2 Tbsp. sugar
  • ½ tsp. kosher salt
  • 1 Tbsp. onion oil
  • 1 Tbsp. room-temperature water

The frizzled onions

  • 2 small onions
  • 1 cup vegetable oil
  • ½ tsp. kosher salt

Instructions

  1. Heat vegetable oil in a skillet and fry one sliced onion until golden brown, then drain on paper towels and season with salt.
  2. Repeat the frying process for the second onion and reserve some oil.
  3. Blend peanut butter, lime juice, fish sauce, sugar, garlic, serrano chile, salt, reserved onion oil, and water until smooth.
  4. Toss sliced Napa cabbage, cilantro, mint, and half of the frizzled onions in a bowl, then drizzle with the dressing and mix.
  5. Serve the salad on a plate and top with remaining cilantro, mint, and frizzled onions.
