Homemade Strawberry Chia Jam

Instructions
- 1. Place strawberries in a small saucepan over medium-low heat and mash them down.
- 2. Cook until strawberries are fully broken down, about 10 minutes.
- 3. Add coconut sugar, chia seeds, and lemon juice to the pan and stir to combine.
- 4. Remove from heat and stir in vanilla extract.
- 5. Let the mixture cool for 5-10 minutes to thicken.
- 6. Transfer to a glass jar and store in the refrigerator.
