Instructions
- Preheat the oven to 350°F and line an 8x8 baking sheet with parchment paper.
- In a large mixing bowl, combine the vegan butter, sugar, and vanilla until smooth.
- Add the vegan egg and mix well.
- In the same bowl, add oats, flour, baking soda, baking powder, and salt. Stir until combined.
- In a small pot, heat the fudge ingredients on low until combined, whisking occasionally.
- In the prepared pan, spread half of the oat mixture and flatten it.
- Pour the fudge mixture over the oat layer evenly, then crumble the remaining oat mixture on top.
- Bake for 25-30 minutes, ensuring not to overbake to keep the fudge soft.
