Ingredients

The Oatmeal

  • ½ cup vegan butter
  • ¾ cup white sugar
  • 1 tbsp Simply Organic Vanilla Extract
  • 1 unit vegan egg
  • 1 tbsp ground flaxseed
  • 3 tbsp warm water
  • cup quick-cooking oats
  • ¾ cup all-purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp sea salt

The Fudge

  • ¾ cup condensed coconut milk
  • ¾ cup chocolate chips
  • 2 tsp vegan butter
  • tsp Simply Organic Vanilla Extract

Instructions

  1. Preheat the oven to 350°F and line an 8x8 baking sheet with parchment paper.
  2. In a large mixing bowl, combine the vegan butter, sugar, and vanilla until smooth.
  3. Add the vegan egg and mix well.
  4. In the same bowl, add oats, flour, baking soda, baking powder, and salt. Stir until combined.
  5. In a small pot, heat the fudge ingredients on low until combined, whisking occasionally.
  6. In the prepared pan, spread half of the oat mixture and flatten it.
  7. Pour the fudge mixture over the oat layer evenly, then crumble the remaining oat mixture on top.
  8. Bake for 25-30 minutes, ensuring not to overbake to keep the fudge soft.
