Vegan Raspberry Oatmeal Bars

Ingredients

Raspberry Chia Jam

  • 2 cups frozen raspberries
  • 2 tbsp chia seeds
  • 3 tbsp pure maple syrup

Oat Bars

  • 1 cup oat flour
  • 1 ½ cups old-fashioned oats
  • 2 tbsp coconut sugar
  • ½ tsp cinnamon
  • ¼ tsp fine sea salt
  • ½ tsp baking soda
  • ½ cup unsweetened applesauce
  • ¼ cup pure maple syrup
  • ¼ cup coconut oil, melted
  • ½ tsp vanilla extract
  • ½ tsp almond extract (optional)

Instructions

  1. Preheat the oven to 325°F and grease an 8x8 inch baking dish.
  2. In a saucepan, combine raspberries, chia seeds, and maple syrup, and cook over medium heat for 8-10 minutes, mashing the berries to create a jam. Set aside to cool.
  3. In a large bowl, mix oats, oat flour, coconut sugar, cinnamon, salt, and baking soda.
  4. Add applesauce, maple syrup, melted coconut oil, vanilla, and almond extract to the dry ingredients and stir to combine.
  5. Reserve a heaping half cup of the mixture, then press the remaining mixture into the prepared baking pan.
  6. Spread the raspberry chia jam evenly over the oat mixture, then crumble the reserved oat mixture on top.
  7. Bake for 30 minutes and allow to cool completely on a wire rack before cutting into bars.
