Instructions
- Preheat the oven to 325°F and grease an 8x8 inch baking dish.
- In a saucepan, combine raspberries, chia seeds, and maple syrup, and cook over medium heat for 8-10 minutes, mashing the berries to create a jam. Set aside to cool.
- In a large bowl, mix oats, oat flour, coconut sugar, cinnamon, salt, and baking soda.
- Add applesauce, maple syrup, melted coconut oil, vanilla, and almond extract to the dry ingredients and stir to combine.
- Reserve a heaping half cup of the mixture, then press the remaining mixture into the prepared baking pan.
- Spread the raspberry chia jam evenly over the oat mixture, then crumble the reserved oat mixture on top.
- Bake for 30 minutes and allow to cool completely on a wire rack before cutting into bars.
