Ingredients

The mixture

  • ½ cup coconut flour
  • ½ cup almond meal/flour
  • ½ cup coconut shavings (unsweetened)
  • 2 tbsp coconut sugar
  • 2 tbsp butterscotch pudding mix (optional)
  • ¼ cup vanilla protein powder

The binding ingredients

  • cup natural peanut butter
  • cup honey
  • 1 tsp natural vanilla extract

Instructions

  1. Combine all dry ingredients in a large bowl.
  2. Add the peanut butter, honey, and vanilla extract to the dry ingredients.
  3. Mix well, using your hands if necessary, until combined.
  4. Roll the mixture into bite-sized balls.
  5. Optionally coat the balls with extra protein powder or butterscotch pudding mix.
  6. Place the balls in the freezer or refrigerator to maintain freshness.
