Chocolate Covered Peanut Butter Bites

Instructions
- In a food processor or blender, combine the dates, powdered peanut butter, coconut flour, protein powder, and salt until smooth.
- Add water and vanilla extract, starting with 2 Tbsp of water. Pulse again, adding more water if the mixture is still dry.
- Scoop out the dough using a tablespoon, roll into balls, and set aside.
- Melt the chocolate chips in the microwave or double boiler until fully melted.
- Dip each peanut butter ball into the melted chocolate to coat completely.
- Place the coated bites on a baking tray or parchment paper.
- Refrigerate for a few minutes to let the chocolate coating harden.
