Ingredients

The bites

  • 12 pieces dates
  • 1 cup powdered peanut butter
  • 2 Tbsp coconut flour
  • ¼ cup vanilla or unflavored protein powder
  • 1 pinch salt
  • 2-3 Tbsp water
  • 1 tsp vanilla extract

The coating

  • cup chocolate chips

Instructions

  1. In a food processor or blender, combine the dates, powdered peanut butter, coconut flour, protein powder, and salt until smooth.
  2. Add water and vanilla extract, starting with 2 Tbsp of water. Pulse again, adding more water if the mixture is still dry.
  3. Scoop out the dough using a tablespoon, roll into balls, and set aside.
  4. Melt the chocolate chips in the microwave or double boiler until fully melted.
  5. Dip each peanut butter ball into the melted chocolate to coat completely.
  6. Place the coated bites on a baking tray or parchment paper.
  7. Refrigerate for a few minutes to let the chocolate coating harden.
