Instructions
- In a food processor or blender, combine dates, powdered peanut butter, coconut flour, protein powder, and salt until smooth.
- Add water and vanilla extract, starting with 2 Tbsp of water, and pulse again. Add more water if the mixture is too dry.
- Scoop out the dough using a tablespoon, roll into balls, and set aside.
- Melt the chocolate chips in the microwave or a double boiler until fully melted.
- Dip each peanut butter ball into the melted chocolate, ensuring they are completely coated.
- Place the coated bites on a baking tray or parchment paper.
- Refrigerate the bites for a few minutes to allow the chocolate coating to harden.
