Ingredients

The bites

  • 12 pieces dates
  • 1 cup powdered peanut butter
  • 2 Tbsp coconut flour
  • ¼ cup vanilla or unflavored protein powder
  • pinch salt
  • 2-3 Tbsp water
  • 1 tsp vanilla extract

The coating

  • cup chocolate chips

Instructions

  1. In a food processor or blender, combine dates, powdered peanut butter, coconut flour, protein powder, and salt until smooth.
  2. Add water and vanilla extract, starting with 2 Tbsp of water, and pulse again. Add more water if the mixture is too dry.
  3. Scoop out the dough using a tablespoon, roll into balls, and set aside.
  4. Melt the chocolate chips in the microwave or a double boiler until fully melted.
  5. Dip each peanut butter ball into the melted chocolate, ensuring they are completely coated.
  6. Place the coated bites on a baking tray or parchment paper.
  7. Refrigerate the bites for a few minutes to allow the chocolate coating to harden.
