Coconut Peanut Butter Protein Bites

Ingredients

  • ¼ cup gluten free granola or other cereal of choice
  • cup coconut flour
  • ½ cup creamy peanut butter
  • ½ cup Vanilla Cream Protein Powder
  • 2-3 tbsp coconut flakes
  • a dash cinnamon
  • cup maple syrup or honey
  • ½ teaspoon Vanilla bean or vanilla Extract
  • ¼ teaspoon coconut extract (optional)

Instructions

  1. Grind the granola in a food processor to a fine texture.
  2. In a large bowl, combine all dry ingredients.
  3. Mix in the nut butter, extracts, and maple syrup or honey until well combined.
  4. Roll the mixture into bite-sized balls, adding more honey or peanut butter if too dry.
  5. Place the balls on a cookie sheet and freeze for 30 minutes.
  6. After freezing, optionally coat them in more vanilla protein or peanut flour.
  7. Store in a ziplock bag in the fridge or freezer.
