Ingredients

  • ½ Cup Shredded Unsweetened Coconut
  • Cup Creamy Cashew Butter
  • ¼ Cup Maple Syrup
  • 1 Teaspoon Vanilla Extract
  • ½ Teaspoon Almond Extract
  • Cup Blanched Almond Flour
  • ¼ Cup Ground Flaxseed Meal
  • 2 Scoops Collagen Peptides OR Unflavored Protein Powder
  • ½ Cup Mini Chocolate Chips

Instructions

  1. Preheat your oven to 400°F.
  2. Line a baking sheet with parchment paper and spread the shredded coconut on it.
  3. Toast the coconut for 7-9 minutes until golden brown, then let it cool.
  4. In a medium bowl, combine half of the toasted coconut with the remaining ingredients and mix well.
  5. Form bite-sized balls of dough using a cookie scoop or spoon.
  6. Sprinkle the remaining toasted coconut over the bites and enjoy.
