Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Blend 1½ cups of rolled oats in a blender until a fine oat flour forms.
- In a large mixing bowl, cream together the butter, light brown sugar, and white sugar until smooth and fluffy.
- Add the peanut butter, eggs, and vanilla extract, mixing until smooth.
- Combine the remaining rolled oats, oat flour, and baking soda, mixing until just combined.
- Fold in the holiday M&Ms, white chocolate pretzels, peppermint bark, and sprinkles, reserving some add-ins for topping.
- Use a 2-ounce cookie scoop to place 6 cookies on the baking sheet, leaving space between each.
- Press a few reserved add-ins into the tops of the cookie dough balls.
- Bake for 11-13 minutes until golden around the edges and soft in the center.
- Let the cookies cool for at least 10 minutes before enjoying.
