Ingredients

The cookie base

  • cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 3 cups old-fashioned whole rolled oats
  • 1 cup unsalted butter
  • 1 cup packed light or dark brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 Tablespoon unsulphured or dark molasses

The mix-ins

  • ½ cup white chocolate chips
  • ½ cup dried cranberries
  • ½ cup sweetened shredded coconut
  • ½ cup chopped pecans

Instructions

  1. Whisk together the flour, baking soda, cinnamon, salt, and oats, then set aside.
  2. Cream the butter, brown sugar, and granulated sugar together until smooth, then add the eggs and mix well.
  3. Incorporate the vanilla and molasses, then mix until combined.
  4. Add the dry ingredients to the wet mixture and mix on low until combined.
  5. Stir in the white chocolate, dried cranberries, coconut, and pecans, then chill the dough for 1 hour.
  6. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  7. Roll the dough into balls and place them on the baking sheets, spaced apart.
  8. Bake for 10-11 minutes until lightly browned, then cool on the baking sheet for 5 minutes before transferring to a wire rack.
