Ingredients

The cookie base

  • cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • 3 cups old-fashioned whole rolled oats
  • 1 cup unsalted butter
  • 1 cup packed light or dark brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 Tablespoon unsulphured or dark molasses

The add-ins

  • ½ cup semi-sweet chocolate chips
  • ½ cup butterscotch morsels
  • ½ cup sweetened shredded coconut
  • ½ cup chopped pecans

Instructions

  1. Whisk together the flour, baking soda, cinnamon, salt, and oats, then set aside.
  2. Cream the butter and sugars together until smooth, then add the eggs and mix until combined.
  3. Incorporate the vanilla and molasses, mixing until well combined.
  4. Add the dry ingredients to the wet mixture and mix on low speed until combined, then add the chocolate chips, butterscotch morsels, coconut, and pecans.
  5. Chill the dough for 1 hour in the refrigerator.
  6. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  7. Roll the dough into balls and place them on the baking sheets, spacing them 2 inches apart.
  8. Bake for 10 minutes until lightly browned on the sides, then cool on the baking sheet for 5 minutes before transferring to a wire rack.
