Instructions
- Melt the butter and let it come to room temperature.
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Roast the pecans on a separate baking sheet for about 8 minutes until fragrant.
- In a large bowl, mix the flour, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk together the melted butter, brown sugar, egg, egg yolk, and vanilla.
- Combine the wet and dry ingredients, then stir in the oats and any mix-ins.
- Scoop the dough onto the prepared baking sheets, spacing them an inch apart.
- Bake for 10 minutes until golden, then let them rest for 5 minutes before transferring to a rack to cool.
