Ingredients

The base ingredients

  • ½ cup unsalted butter
  • ¾ cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • ½ teaspoon ground cinnamon
  • teaspoon ground nutmeg
  • ¾ cup packed light brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon pure vanilla extract
  • 2 cups old fashioned rolled oats

Optional mix-ins

  • ½ cup chopped pecans or walnuts
  • ¾ cup raisins or chocolate chips or a mix

Instructions

  1. Melt the butter and let it come to room temperature.
  2. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  3. Roast the pecans on a separate baking sheet for about 8 minutes until fragrant.
  4. In a large bowl, mix the flour, baking soda, salt, cinnamon, and nutmeg.
  5. In another bowl, whisk together the melted butter, brown sugar, egg, egg yolk, and vanilla.
  6. Combine the wet and dry ingredients, then stir in the oats and any mix-ins.
  7. Scoop the dough onto the prepared baking sheets, spacing them an inch apart.
  8. Bake for 10 minutes until golden, then let them rest for 5 minutes before transferring to a rack to cool.
