Easy Seasoned All Purpose Roasted Potatoes

Ingredients

The potatoes and vegetables

  • 4 medium Yukon Gold Potatoes, diced
  • 1 large Red Bell Pepper, diced
  • 1 medium Onion, diced

The seasonings

  • ½ tbsp Salt
  • 2 tsp Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Paprika
  • 1 tsp Onion Powder

The oil

  • 4 tbsp Avocado Oil or other high heat oil

Instructions

  1. Preheat the oven to 425°F.
  2. Drizzle half of the oil onto a large sheet pan and sprinkle half of the seasonings.
  3. Add the diced potatoes, onions, and peppers to the pan and toss to coat with the oil and seasonings.
  4. Drizzle the remaining oil and seasonings over the vegetables and toss again.
  5. Bake in the oven for 25 minutes.
  6. Flip the potatoes and cook for another 20 minutes, checking for doneness.
