Mixed Roasted Potatoes

Ingredients

The potatoes

  • 2.5-3 lbs mixed potatoes
  • 1 medium sweet potato
  • 3 whole garlic cloves

The seasoning and oil

  • 3 Tbsp extra virgin olive oil or avocado oil
  • 2 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp fresh ground pepper
  • 1 tsp sea salt
  • 3 Tbsp rosemary
  • ½ cup flat leaf parsley
  • zest of one small lemon

Instructions

  1. In a large pot, combine the mixed potatoes and bring to a gentle boil for 10 minutes, then drain and cool.
  2. Preheat the oven to 425°F.
  3. Peel and cut the sweet potato into larger chunks, while leaving smaller potatoes whole.
  4. Place all potatoes and garlic cloves on a large baking sheet and drizzle with oil, garlic powder, smoked paprika, pepper, and salt, tossing to coat.
  5. Bake for 35 minutes, stirring once halfway through, until browned and tender.
  6. Chop the rosemary, parsley, and lemon zest while the potatoes roast.
  7. Once roasted, add the herbs and lemon zest to the potatoes, stir, and adjust salt to taste before serving.
