Mixed Roasted Potatoes

Instructions
- In a large pot, combine the mixed potatoes and bring to a gentle boil for 10 minutes, then drain and cool.
- Preheat the oven to 425°F.
- Peel and cut the sweet potato into larger chunks, while leaving smaller potatoes whole.
- Place all potatoes and garlic cloves on a large baking sheet and drizzle with oil, garlic powder, smoked paprika, pepper, and salt, tossing to coat.
- Bake for 35 minutes, stirring once halfway through, until browned and tender.
- Chop the rosemary, parsley, and lemon zest while the potatoes roast.
- Once roasted, add the herbs and lemon zest to the potatoes, stir, and adjust salt to taste before serving.
