Overnight Sandwich Rolls

Instructions
- 1. In a large bowl, whisk together 4 cups of flour, salt, and instant yeast.
- 2. Add the cold water and mix to form a wet, sticky dough ball.
- 3. Cover the bowl and let it rise at room temperature overnight or for up to 12 hours.
- 4. The next morning, preheat the oven to 425ºF and line a sheet pan with parchment paper.
- 5. Spread ¼ cup of flour over a work surface and dump the dough onto it.
- 6. Divide the dough into 6 equal portions and shape each into a rough ball.
- 7. Stretch each ball into a rectangle and transfer to the prepared sheet pan.
- 8. Let the shaped rolls rise for 20 minutes.
- 9. Bake for 15 minutes, rotate the pan, and bake for an additional 5 minutes until golden.
- 10. Transfer the rolls to a cooling rack to cool completely.
