Ingredients

  • 4 cups unbleached all-purpose flour
  • ¼ cup unbleached all-purpose flour (for shaping)
  • 2 teaspoons kosher salt
  • ½ teaspoon instant yeast
  • 2 cups cold water

Instructions

  1. 1. In a large bowl, whisk together 4 cups of flour, salt, and instant yeast.
  2. 2. Add the cold water and mix to form a wet, sticky dough ball.
  3. 3. Cover the bowl and let it rise at room temperature overnight or for up to 12 hours.
  4. 4. The next morning, preheat the oven to 425ºF and line a sheet pan with parchment paper.
  5. 5. Spread ¼ cup of flour over a work surface and dump the dough onto it.
  6. 6. Divide the dough into 6 equal portions and shape each into a rough ball.
  7. 7. Stretch each ball into a rectangle and transfer to the prepared sheet pan.
  8. 8. Let the shaped rolls rise for 20 minutes.
  9. 9. Bake for 15 minutes, rotate the pan, and bake for an additional 5 minutes until golden.
  10. 10. Transfer the rolls to a cooling rack to cool completely.
