Ingredients

Cajun Dipping Sauce

  • 2 egg yolks egg yolks
  • 3 tsp mild hot sauce
  • tsp fresh lemon juice
  • ½ tsp dijon mustard
  • ½ cup extra virgin olive oil
  • 1 Tbsp Kit’s Salt-Free Creole Seasoning
  • ½ tsp sea salt

Fried Shrimp

  • 1 lb shrimp, peeled except tails
  • ¼ cup blanched almond flour
  • ¼ cup arrowroot powder
  • 2 tsp Old Bay seasoning
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • 2 eggs eggs
  • ½ cup avocado or coconut oil

Instructions

  1. Prepare the Cajun dipping sauce by blending egg yolks, hot sauce, lemon juice, and mustard in a food processor.
  2. Slowly drizzle in olive oil while blending until a thick emulsion forms.
  3. Add creole seasoning and salt, then blend until combined and transfer to a serving bowl.
  4. Dry the shrimp with paper towels.
  5. In a shallow bowl, mix almond flour, arrowroot powder, Old Bay, garlic powder, and salt.
  6. In another shallow bowl, whisk the eggs.
  7. Heat oil in a cast iron skillet over medium-high heat.
  8. Dip shrimp in the egg mixture, then dredge in the flour mixture, shaking off excess.
  9. Fry shrimp for about 2 minutes per side until golden, then transfer to a cooling rack lined with paper towels.
