Instructions
- Prepare the Cajun dipping sauce by blending egg yolks, hot sauce, lemon juice, and mustard in a food processor.
- Slowly drizzle in olive oil while blending until a thick emulsion forms.
- Add creole seasoning and salt, then blend until combined and transfer to a serving bowl.
- Dry the shrimp with paper towels.
- In a shallow bowl, mix almond flour, arrowroot powder, Old Bay, garlic powder, and salt.
- In another shallow bowl, whisk the eggs.
- Heat oil in a cast iron skillet over medium-high heat.
- Dip shrimp in the egg mixture, then dredge in the flour mixture, shaking off excess.
- Fry shrimp for about 2 minutes per side until golden, then transfer to a cooling rack lined with paper towels.
