Ingredients

The shrimp

  • 1 pound jumbo shrimp or prawns (peeled and deveined)

The breading

  • cup finely grated parmesan cheese
  • ¾ - 1 cup blanched almond flour
  • to taste salt and pepper
  • to taste seafood seasoning (such as Old Bay)

The binding and cooking

  • 2 eggs (beaten)
  • 1 tablespoon olive oil
  • 3 tablespoons butter

Instructions

  1. Combine almond flour, parmesan cheese, seafood seasoning, salt, and pepper in a bowl.
  2. Place beaten eggs in another bowl.
  3. Dredge shrimp in eggs, then in the almond flour mixture.
  4. Heat a skillet on medium-high and add olive oil and butter.
  5. Add shrimp to the skillet and avoid moving them until a crust forms, about 3-4 minutes.
  6. Flip the shrimp and fry the other side for a couple of minutes.
  7. Remove shrimp from the pan and cool before serving.
